If I was asked to describe Colombia in one word I would say mountains. Overlooking the Villegas farm, Villa Ines, views like this are spectacular but not uncommon when traveling through the country. But though picturesque, the steep incline creates an immense workload and cost when it comes to the harvesting and care of the farm. Many coffee farms have nurseries as part of their long-term maintenance and expansion plan. These little seedlings wouldn’t be planted for another session, but the shine to their leaves shows how well cared for and full of life they are. Journey to Origin: Sarah Elliott, South Wacker Cafe Manager, in Guatemala & Colombia

Sarah, our Manager at Mojo South Wacker in Chicago, was part of the Mojo team that visited Guatemala and Colombia in February to meet the farmers who grow the coffee we drink in our cafes every day. Here are some of the highlights from the first few days of the trip. First day in Guatemala and we’re already traveling the local way- back of a pick-up truck. A Flat White in Chicago

  Loved by more than 28.5 million people (mostly New Zealanders and Australians), the flat white is gaining popularity in America - and there's a good reason why. Double shot of espresso topped with just the right amount of velvety milk, this hot drink is strong in espresso flavor yet creamy in mouthfeel. It's coffee perfection. We recently opened our first cafe on 200 South Wacker in the Chicago Loop and the flat white is a notable favourite among Chicagoans. We weren't sure, at first, how customers would react to a smaller drink size when many are use to Grande and Vente size drinks but our New Zealand style flat white is being embraced into morning ritual's around the loop....
